Since this will be my last email for a few, I thought I’d do something special.

I recently came up with this particular recipe and was blown away by how good it was. Truthfully, I’m about a mid-average cook with an arsenal of like one dish I’m consistent with. So I was actually impressed this time around.

CHICKEN SPAGHETTI

Ingredients:

4 boneless chicken thighs or 2 boneless chicken breasts. Chicken breasts are humongous these days. Adjust to your needs.

1 cup of Olive Oil.

2 teaspoons of black pepper, onion powder, and your favorite season-all season salt, each.

1 package of pasta. I like Fettuccine overall, but Linguine works well with this dish.

2 large Jalapeno Peppers.

A saucepan big enough for one package of pasta.

A strainer or method for draining the pasta.

Instructions:

First, slice the Jalapeno peppers and the chicken, length-wise for both.

Add the black pepper, onion powder, and season salt to the chicken and Jalapenos.

Cook the pasta. Boil to your desired tenderness. Meanwhile, the chicken will be marinading. Drain the pasta once cooked and set aside.

While the saucepan is still hot, add ½ of the Olive Oil.

Let the oil warm for about 90 seconds.

Add the peppers and chicken, cook, until the chicken is done.

Drain any excessive oil.

Add the cooked pasta and the remaining half of the olive oil.

Stir, cover, turn off the isle, then let it rest for about 5 minutes.

Garnish with cheese, garlic, tomatoes, you name it.
